The Oldstead Wine Series & Overnight Stay
This October and November, we invite you to step beyond the dining room and into the world of wine at The Black Swan at Oldstead, with a series of four intimate masterclasses exploring the craft, character and provenance of exceptional wines.
The Oldstead Wine Series brings together our cellar, our kitchen and our approach to flavour for four different masterclasses of discovery. Each date offers a unique theme, from the art of pairing wine with the flavours of Oldstead to an exploration of South Africa’s diverse regions, producers and terroirs. The series will culminate in The Judgement of Oldstead: a blind tasting inspired by the legendary Judgement of Paris of 1976, pitting Old World against New World wines.
Each experience begins at 2.30pm in our downstairs bar, where our Sommelier will guide you through six carefully selected wines, before check-in at 3.30pm to one of our beautifully appointed bedrooms. That evening, settle in for a Michelin-starred tasting menu at The Black Swan, followed by a leisurely breakfast the following morning.
With just four dates available, each masterclass offers a rare opportunity to experience Oldstead through the lens of wine, food and place.

– Oldstead Wine Series tasting experience in our downstairs bar from 2.30pm–3.30pm, featuring five to six wines served at 50ml per tasting, hosted by our Sommelier.

– The Adventurous wine package to accompany your tasting menu, with the opportunity to upgrade to a different package in the evening, should you wish.

9th October - The Art of Wine Pairing
Discover the philosophy behind pairing wine with food at The Black Swan at Oldstead.
Our Sommelier will explore how different styles of wine interact with the flavours, textures and ingredients that define our cooking, introducing you to the principles we use when creating pairings for our tasting menu.
Taste six wines – three whites and three reds – alongside a selection of Oldstead-inspired flavours, discovering how the right wine can transform a dish (and vice versa).
23rd October - South African Wine Masterclass
Journey to South Africa through six distinctive wines, exploring the remarkable diversity of its vineyards, climates, regions and producers.
From cool coastal sites to warmer inland regions, this masterclass offers an insight into the influence of terroir and the individual character of South African wine. Drawing on our close relationships with producers from the region, our Sommelier will guide you through six wines that showcase the breadth and personality of this fascinating wine country.
6th November - The Art of Wine Pairing II
A second exploration of the art of pairing wine with the flavours of Oldstead.
Building on the first masterclass, discover a new selection of six wines and explore how contrasting styles, varieties and origins can complement the ingredients and techniques found in our kitchen.
Through a series of Oldstead-inspired pairings, our Sommelier will share the thinking behind our approach to wine, food and flavour, demonstrating how considered pairing can elevate both the glass and the plate.
20th November - ‘The Judgement of Oldstead’
Inspired by the historic Judgement of Paris of 1976, our final masterclass invites you to put Old World and New World wines head-to-head in a blind tasting.
Six wines will be tasted without revealing their origins, challenging you to consider style, structure, terroir and character without the influence of labels or expectations.
As the tasting unfolds, discover how wines from different traditions and regions compare, before the identities of each bottle are revealed.
The Judgement of Oldstead offers a fitting finale to our inaugural wine series: an evening of discovery, debate and, perhaps, a few surprises.

Please note…
The Oldstead Wine Series is designed as an intimate, shared experience. The wine tasting takes place as a communal masterclass, with guests from up to two other rooms joining you. This gives the experience a relaxed and convivial atmosphere, while still allowing plenty of opportunity to engage with our Sommelier and discover the wines being presented.
Terms & Conditions
The package is based on two people sharing one room. A £300 deposit is required at the time of booking to secure your reservation. Cancellations made more than 14 days before arrival will receive a full refund of the deposit, less a £10 administration charge. Cancellations made within 14 days of arrival are non-refundable. The remaining balance of the package, together with any drinks, wine upgrades or additional extras enjoyed during your stay, will be payable on departure. Wine upgrades are subject to availability and will be charged separately. The package is available only on the specified dates of The Oldstead Wine Series and is subject to availability.
Dine at The Black Swan Oldstead
The Black Swan is a 1 Michelin-star, a Michelin Green Star and 4 AA Rosette restaurant with rooms by chef Tommy Banks.
Experience a tasting menu that is inspired by the ingredients that we grow and forage ourselves in and around Oldstead. The tasting menu is priced at £195 per person for dinner and £135 per person for Saturday lunch.
Stay at The Black Swan Oldstead
We offer 1 night stays Tuesday - Saturday which include the tasting menu, overnight stay and breakfast in one of our nine beautiful rooms. When The Black Swan rooms are full we offer our packages at our sister site, The Abbey Inn at Byland (located 1 mile away). Please note The Abbey Inn is closed on a Tuesday and Wednesday; check in would be at The Black Swan on both these days.
We also offer 2 night packages arriving on a Saturday or Monday only. Guests will enjoy our tasting menu on Saturday/Tuesday and can experience our sister restaurant, The Abbey Inn, on the Sunday/Monday.
