Great success for Tommy with a dish to the banquet

Tommy had a record breaking run on this year's Great British Menu and was elated to have a dish chosen to be served at The Banquet in Westminster Abbey. He found it such a humbling experience, and who knows, maybe we'll see Tommy on our TV screens again soon!

The Banquet

This year, the banquet held at The Palace of Westminster, is to honour Her Majesty, Queen Elizabeth II's 'Great Britons'. In the year the country celebrates the Queen's 90th birthday, the chefs have been inspired by the transformation in British food throughout her historic reign.

Celebrating Great Britain

"I really enjoyed this years brief. It's about celebrating Great British food and I feel that's something that I try to do everyday. I don't think the brief could be any better suited to me and the way we cook at The Black Swan"

My Inspiration

"“I am very passionate about my dishes. I've taken inspiration from traditional dishes, historic ingredients, heritage breeds and used them in a very modern way."
